Porridge Pudding
ready for an overindulgent chocolate & coconut porridge with caramelised bananas to start (or end?) the day?
You can edit the sweetness and go crazy on the toppings and it's still going to be relatively healthy!! Maple syrup and fruit are your sweeteners, the caramelisation on the bananas are an added explosion of depth and deliciousness.

PORRIDGE PUDDING
Such a luxurious bowl for breakfast and yes, you are worth it. Plus it only takes about 15 mins to make!
SERVES 2
PREP TIME 5 MINS | COOK TIME 10 MINS | TOTAL 15 MINS
INGREDIENTS
1 tsp coconut oil
1/2 cup oats
1/8 cup cocoa powder
1 tsp cinnamon
1/4 tsp salt
2-4 tbsp maple syrup
1 cup coconut milk (or any DF milk)
1 banana
METHOD
Gently simmer the oats, milk, cocoa powder, cinnamon and salt for 10 mins stirring often. Simmer until oats are cooked (adding more milk or water to loosen the consistency if desired.
Add 2 tbsp of maple syrup and taste. Add more if desired.
Meanwhile, heat oil in a non stick frying pan and add the sliced bananas, flip over once underside starts to caramelise and continue cooking until both sides are golden.
Dish up porridge topping with banana and any other fruit you have in the fridge (strawberries? yum)
